Occam’s Razor Shiraz
Produced since 2001, Occam’s Razor has always come from purchased fruit from the Heathcote region. The first 18 vintages from a vineyard in Mia Mia, the fruit now comes from two sites, primarily from a vineyard in the north and a small parcel from near Lake Eppalock. Made in a similar fashion to the Jasper Hill wines however different vineyards and picking early create a completely different wine.

Grapes from Colbinabbin, mid-north of the Heathcote region, blended together with a smaller parcel from further south west. Harvested early to capture a great fresh feel. Once again we have sourced grapes from Colbinabbin, mid-north of the Heathcote region and blended together with a parcel of Heathcote fruit from further south west. Going forward with the Occam’s label we aim for continuity with these vineyards into the future. We closely watched ripening and harvested early to capture a great fresh feel. Emily and Nick’s own label, named after 14th century theologian William of Occam’s philosophy of “less is more”, with a stylised “ < less than” symbol on the label, very applicable to our minimal intervention winemaking methodology. Having purchased fruit for eighteen years from a vineyard in the south of Heathcote, the vineyard sadly became unavailable. With grapes now sourced from a different Heathcote vineyard, one in the northern part of the Heathcote GI, this is well balanced and forward drinking. It has great colour and intense nose, exhibiting the savoury, fresh red fruits and vibrant acidity, typical of Heathcote Shiraz. Emily’s own label, named after 14+ century theologian and philosopher William of Ockham’s view of “less is more” – applicable in winemaking as minimal intervention. A fabulous wine grown on granite based soil, to compare with the basalt derived Jasper Hill wines. Exhibits savoury up-front fruitiness, elegant raspberry, cola and dark chocolate characters. Delicious now and cellarable. Again, the 15.5% alc /vol doesn’t show. -

Emily’s sixteenth vintage of her own single vineyard Heathcote wine, from Shiraz grown in the South of the Heathcote region on granite based soil. Delightful deep crimson colour with upfront plush fruit aromas and a beautiful, balanced palate of ripe red plums and chocolate. Delicious. 15.5% alc /vol -

Medium deep crimson. Intense fragrant blackberry pastille aromas with herb garden ginger liquorice notes. Well concentrated blackberry, liquorice flavours, ginger oak complexity and underlying savoury notes, fine grainy al dente tannins and underlying mineral acidity. Accentuating differences in terroir, Emily’s own wine from a single vineyard south of Heathcote, grown on soil derived from granite compared to the Jasper Hill wines from Cambrian basaltic soils. A ripe fruitiness with a floral touch to the bouquet, licorice /aniseed, even licorice allsorts. Fine legs, powerful long tannins. Medium deep crimson. Blackcurrant white pepper, violet aromas with hint of mint. Generous inky wine with blackcurrant, blackberry, mulberry fruits, attractive mid palate richness, fine looseknit chalky textures and mineral length. Plusher fruits compared to Georgia’s Paddock Shiraz and a little more tannic: bright crimson, lots of depth, plumy, ripe red fruits. Medium deep crimson. Fragrant inky herb garden aromas with redcurrant, cola notes. Richly concentrated wine with inky blueberry, redcurrant, herb garden flavours, a touch of liquorice, mocha oak and fine looseknit slinky tannins. This is Emily’s own wine. Dark brooding red, with briary cherry flavours and a touch of liquorice. Good levels of grape and oak derived tannins and perfect acidity to impart longevity. Growing on granitic clay soil in the southern part of Heathcote imparts more perfume to this wine. It has an all-over mouth feel with long lasting flavours of ripe red berries, aniseed and a slight tar finish. Lots of colour; a tooth stainer! Cellar it if you wish.
