Jasper Hill is a small, family owned and operated organic vineyard and winery in Heathcote, central Victoria, Australia.

Reflecting the complex geology of Heathcote, Jasper Hill Vineyard is synonymous for crafting exceptional wines expressing its unique terroir, yet amidst such hype, the real story behind what's in your glass begs consideration. 
 
Situated on ancient soils north of the township, Emily's Paddock and Georgia's Paddock were planted in 1975.  Dry grown(un-irrigated)and organic with care given to each vine during its dormant and growing seasons. Cane pruned by hand with attention to bud positioning and numbers nurtures vine health. Promoting growth with shoot thinning during spring and bunch thinning later in summer.  Caring for the soil with compost,  compost teas, and cover crops protects the microbiology and keeps the nutrient cycle alive. 

In the winery cleaning is our top priority. Understanding that microbes are responsible for fermentation we try not to disturb their environment.  Aging in French oak for twelve months develops complexity. Filtering, bottling and packaging is completed on site.

We strive to work hard on our strengths, keeping our business small and manageable is the best way to achieve sustainability.
